Place kosher salt or Tajín on a small plate. Rub half the outer rim of a rocks glass with a lime wedge (reserve for serving), then roll moistened rim in salt/Tajín. Or use a brush to brush hot honey on the side of the glass and roll in salt/Tajín.
Fill glass with ice and set aside.
Make peach puree by blending 1 peach in a blender until smooth.
In a shaker, combine peach puree and hot honey to mix. Add mezcal , triple sec and lime juice.
Fill shaker with ice, cover, and shake vigorously for 15–20 seconds until cold.
Strain mixture into prepared glass.
Garnish with reserved lime wheel, peach slice, or small chili.
Serve immediately and enjoy the sweet, smoky, spicy perfection.
