Carrot and Cauliflower Pickle (Achar)

Carrot Cauliflower Ginger Pickle is an Indian condiment served with food. It has crunchy cauliflower, carrots coated in a vinegar and spicy chili mustard seed sauce. Flavorful and extremely delicious it tastes great on it own or topped on a variety of dishes.

  • 1 cup chopped carrots
  • 1 cup chopped cauliflower
  • 1/2 cup white vinegar 
  • 3 tablespoons Diaspora chili powder adjust as needed
  • 1 tablespoon kosher salt
  • 1/3 cup avocado oil or your choice of neutral oil
  • 1/4 teaspoon asafetida
  • 1 teaspoon grated ginger
  • 1 tablespoon mustard seeds 


  • In a medium bowl, add carrots, cauliflower, white vinegar, chili powder and salt.
  • For tadka, heat a small pan over medium heat. Add asafoetida, mustard seeds and ginger until the mustard seeds start to splutter. Then pour this mixture into the bowl with carrot and cauliflower. Using a spoon mix until well combined.
  • Serve with dal and rice or use it as a topping on grain bowls or salad.
